I don’t know about you, but I’m so ready for fall’s soothing soups, warm sweaters, spiced pumpkin and oh, gingerbread: how I love thee (they’re called comfort foods for a reason).
The Disney Parks are one of my family’s favorite places on earth and it’s been our dream to visit Mickey’s Not-So-Scary Halloween Party, a special event September 15-November 1 featuring trick-or-treating, giant pumpkins, Disney Characters, live entertainment and more in Magic Kingdom park. Since I’m stuck in Colorado, I’ll just have to live vicariously through the Disney Parks blog where they recently published a handful of their favorite fall recipes. And it’s almost like being there. Except for being really, really happy.
1. Gingerbread Beignets with Eggnog Crème Anglaise from Café Orleans, Disneyland park. Who knew gingerbread could taste this good?
2. Goblins and ghouls awaken the spirits outside the Haunted Mansion in Disneyland Park. These Pumpkin Twists are made with frozen puff pastry and pureed pumpkin and are easier than they look.
3. Hearty Pozole Soup, the Perfect Fall Supper from Paradise Garden Grill at Disney California Adventure Park.
4. This Pumpkin Mousse Trifle with layers of pumpkin, streusel and Cranberries and Apricot-Orange Sauce from the Epcot International Food & Wine Festival will make you forget pumpkin pie even exists!
5. We started with gingerbread beignets, we end with Pumpkin Beignets from Club 33 in Disneyland park. This warm maple glaze will have you praising fall’s return.

This is the reason I gain more weight in the fall than I do at Christmas. Can’t get enough of pumpkin.

First, I had no idea Disney was so big around Halloween (and why am I not there?) Second, these recipes look delicious!
